I listened to the mp3 and and saw the banana bread slide show. I have the following concerns regarding your comfort food alternatives:
1) They seem to be very high in fat! I think you should provide a nutritional breakdown in terms of macro nutrients for each of your recipes. I suspect once you analyse this you will find them to be high in fat…not a healthy alternative to the higher carbohydrate based foods such as gluten bread, cake, etc.
What I was hoping to find in your recipes were alternatives to gluten bread. The raw thing is not all that important in my opinion. Trevor mentions the concern about akrilimide and granted baking bread in an oven can lead to heating above 248 F as he mentioned in his mp3 file with you…i.e. so I see the idea of using a dehydrator as a way to get around that but using a full cup of chia as a binder is little over the top in terms of fat in my opinion. Perhaps you could get away with 1/2 of 1/4 of the amount and still get adequate binding to happen or maybe there’s a less fatty binding ingredient that could be used.
